Selected SDS-PAGE and immunoblot samples are shown for both albumins, Ara h 2 and pea PA2 albumin. A Ara h 2 displays complete resistance up to 1 h to pepsin at acidic pH, whereas the pea albumin is undetectable after 5 min. Both albumins are unaffected by pepsin at pH 4.0. B Pea albumin PA2 appears to be more resistant to pancreatin than Ara h 2. Surprisingly the disappearance of Ara h 2 is transient when it has not been exposed to acidic pH and active pepsin. C High resistance of Ara h 2 to pepsin is confirmed for IgE. For pea albumin susceptibility could not be confirmed because no sera with pea albumin reactive IgE were found. Susceptibility characteristics of Ara h 2 to pancreatin were also confirmed with IgE
